Introducing Coro Restaurant: A New Culinary Gem in Audubon Park

Introducing Coro Restaurant: A new culinary gem in Audubon Park.  Audubon Park, constantly evolving in its culinary landscape, is about to witness a significant shift. The iconic Bikes, Beans & Bordeaux, which graced 3022 Corrine Drive for 15 years, bid farewell last November. Now, nearly a year later, a fresh dining experience will breathe life into this space – Coro Restaurant, masterminded by the talented chef Tim Lovero.

Tim Lovero, renowned for his role as the executive sous chef at Maitland’s Luke’s Kitchen & Bar, is on the verge of introducing a dining concept like no other. Coro Restaurant is characterized as an establishment that offers “American-style small plates with a slight Italian influence.” The name ‘Coro’ is derived from the Italian word for choir, ‘coro,’ but for Lovero, it signifies the fusion of flavors and ingredients working in unison to craft the perfect dish. On a broader scale, it represents the synergy among people, food, and ambiance that culminates in a memorable dining adventure.

What Can We Expect From Coro?

Regarding the restaurant’s ambiance, Lovero envisions a relaxed and unpretentious atmosphere where patrons can unwind and savor their dining experience. The menu is a testament to his creative flair, featuring fresh pasta and lighter shared dishes infused with Japanese culinary techniques, philosophy, and ingredients. Notably, the menu places a strong emphasis on vegetables, aligning with the seasonality and availability of locally sourced produce.

Lovero’s culinary philosophy extends beyond taste and aesthetics; it also champions sustainability. He is dedicated to making the most of every ingredient and minimizing waste by ingeniously repurposing by-products. This sustainable approach not only aligns with global gastronomic trends but also underscores his commitment to responsible dining.

Coro Restaurant is set to make its mark on the Audubon Park dining scene, with Lovero aiming for an opening date in late October. However, the precise timing hinges on construction schedules and the necessary permits. For Lovero, this venture represents more than just a business endeavor; it is the realization of a lifelong dream.

A Dream Come True

He reflects on his culinary journey, recounting how his career evolved at Park Lights Hospitality, with notable stints at esteemed establishments like the now-closed Luma on Park, Prato, and Luke’s. “This is something I’ve aspired to do since I was 8 years old,” Lovero confided to local sources, the first to break the story. His passion for the culinary arts has transformed aspirations into reality, marking a significant milestone in his culinary career.

Reflecting on his journey, Lovero acknowledges the evolution of his perspective. He notes that in his earlier years, it was all about personal ambition, but now, it’s about faith and family. He expresses gratitude for the opportunity to pursue his passion while prioritizing what truly matters to him.

Coro Restaurant will be a refreshing addition to Audubon Park’s culinary landscape. With its commitment to delivering innovative small plates, a vegetable-centric menu, and a focus on sustainability, Coro is set to captivate food enthusiasts and community members alike. As the wheels of the restaurant industry continue to turn, Coro Restaurant, under the culinary guidance of Chef Tim Lovero, stands ready to embark on a gastronomic journey, harmonizing flavors, people, and the dining ambiance.
