The BBQ Concept, Boxer And Clover, Is Coming To East End Market


Boxer and Clover, conceived by entrepreneur Matt Hinckley, is poised to bring its barbecue delights to East End Market. Despite Hinckley’s Fancy Meats being a mainstay at the market for half a decade, Boxer and Clover represents a fresh endeavor aimed at enhancing the barbecue scene in Audubon Park.

Set to open in March, Boxer and Clover will assume control of the Farm & Haus stall, signaling a new chapter in the market’s culinary narrative. This development coincides with Patrick Lyne and Brittany Walsh-Lyne bidding adieu to the space in late January, redirecting their attention to their Park Avenue restaurant, marking its one-year anniversary this month.

Boxer And Clover Takes Inspiration From George Orwell


Taking inspiration from George Orwell’s Animal Farm, Boxer and Clover draws its name from the diligent equines in the literary masterpiece. In contrast to confining itself to a specific regional style, the barbecue concept will explore classic Southern barbecue essentials, showcasing brisket, pork butt, chicken thighs, ribs, collards, and mac & cheese.

Matt Hinckley articulates his culinary vision for Boxer and Clover, expressing, “I don’t want to be pigeonholed, so I’m just going to let it naturally evolve.” Armed with two smokers, one dedicated to live-fire cooking, Hinckley’s approach stems from his global culinary experiences, spanning Tanzania, New Zealand, and Miami.

What About The Menu?


Regarding the menu, the prospect of mishkaki, a traditional East African skewered meat dish, remains on the table. Hinckley is receptive to experimentation, affirming, “Mishkaki would work really well!”

Boxer and Clover is just one facet of Hinckley’s ventures; he anticipates the unveiling of Mid Drive Dive in College Park shortly after Valentine’s Day. The barbecue joint is slated for a six-month tenure at East End Market, prompting Hinckley to evaluate the possibility of an extension or a transition to a full-fledged brick-and-mortar establishment.
