Aji Ceviche Bar in Orlando

“Fresh” is one of the words that comes to mind to describe Aji Ceviche – a Peruvian restaurant with two locations in Central Florida – one in Casselberry and the other one on OBT. Aji Ceviche was one of the sponsors of the Jingle Mills Holiday Party last month, and they wow’d the crowds with their mouth-watering ceviche, arroz con mariscos and Aji de gallina.

Aji Ceviche Bar was founded by Freddy Zubieta who has infused his passion for food and cooking into his business. Cooking is his passion and his way of expressing himself.

The roots of my passion for cooking, arise from an early age within me. I started cooking when only 15 years old. I studied gastronomy in Peru and Mexico, expanding my culinary experience internationally, in Spain and the United States.” – Freddy Zubieta

In March of 2015, they took their first steps in Orlando with the Aji food truck. Their goal was to provide a new alternative to Peruvian cuisine in Orlando. After the success of their initial food truck, they opened the doors to their first restaurant. Freddy Zubieta did this in partnership with Gabriel Romero and Freddy Zubieta. On August 23 2018, they opened the doors of our first AJI CEVICHE BAR branch. Always more than welcome to Ají Ceviche Bar.

From Food Truck to Restaurant

So, why did they start with a food truck? Their founder Freddy Zubieta operated the Aji Peruvian food truck prior to opening Aji Ceviche Bar, first on South Orange Blossom Trail and then in the former El Buzo space in Casselberry. Prior to Aji Ceviche, Zubieta ran Lima 41 on Curry Ford Road.

New Locations In Central Florida

Currently Aji Ceviche has two locations in Central Florida – 11236 S Orange Blossom Trl in Orlando and 1436 State Road 436 #1024 in Casselberry. Aji Ceviche is opening 2 new restaurants. AJI EXPRESS (grilled chickens) in January they open one AJI CEVICHE in Tampa, and this year Aji Gastro in Lake Nona.
