Perla’s Pizza: The Rebellious Pie House Returns To Winter Park
Perla’s Pizza, the innovative pie house by Michael Collantes, will reopen this fall in Winter Park. Known for its eccentric toppings and unique flavor combinations, Perla’s Pizza is set to make a splash in the local food scene once again.
The Return Of Perla’s Pizza
Michael Collantes initially launched Perla’s Pizza with Christian Ziegler in February 2021. Despite its promising start, the business was dissolved after just six months. Ziegler then took over the original space on Virginia Drive, rebranding it as Ziggie’s Pizza. Now, Collantes is bringing Perla’s Pizza back, just two doors down from his omakase restaurant Soseki, and adjacent to his sake lounge Bar Kada in Winter Park.
A New Chapter With Nonconformist Pies
Perla’s Pizza is famous for its nontraditional toppings that fans can’t get enough of. Favorites like pineapple jam and bananas have made a name for themselves among the offerings. Picture this: a cheesy, red-sauce pie with pepperoni, Calabrese peppers, and yes, bananas. The “It’s Bananas” pizza, with its subtle fruity flavor, leaves diners craving more of the unexpected ingredient.
So, will bananas make an appearance on the new Perla’s Pizza menu? “All I can say is it’s Florida Man pizza,” says Collantes. “We’re using pizza as a vessel to create something tasty and nontraditional. Really, it’s just pizza we like to eat. And, yes, bananas will make it onto our pizza.”
Exciting New Creations
Collantes promises even more offbeat combinations in this new iteration of Perla’s Pizza. One highlight is a creative take on a New York City staple: the vodka penne pizza. “We’re going to do a play on that called Mom’s Spaghetti,” he reveals, hinting at the unique and delightful surprises in store for customers.
Perla’s Pizza is set to open in late fall at 959 W. Fairbanks Ave., a location previously occupied by the Winter Park Collective and the Wine Barn before that.
