Stick to your resolution to eat healthy on the go without sacrificing flavor. Bolay is now open in Winter Park on 1971 Aloma Ave. Winter Park, FL 32792 in the Sprouts Market Plaza. The fast-casual healthy eatery already has a few locations in Lake Nona, Pembroke Pines, and West Palm Beach. They are planning on opening a location by UCF later this year. We’re excited that they are bringing fresh, healthy, and gluten-free options to the Winter Park neighborhood.
Bolay’s grand opening was last Friday on February 15, which they kicked off with activities and giveaways. Some of the giveaways included a pineapple scavenger hunt, free exercise vouchers to fitness centers.
The Bolay founders Chris Gannon and father Tim Gannon wanted to create a fast-casual dining experience for those who lead a gluten-free lifestyle. Interestingly, Tim Gannon is also the co-founder of Outback Steakhouse. Bolay is 100% gluten-free and the only restaurant in Florida that is gluten-free certified.

Founder Chris Gannon developed a taste for international cuisine while he traveled the world, going from kitchen to kitchen. As a result, Bolay is more than a “fast casual” restaurant. It was borne from the belief that the “fast” and the “casual” can be extraordinary and nutritious.
As a fast-casual dining experience similar to Chipotle, diners customize and build their own bowls and salads. Bolay has the freshest ingredients and superfoods: ranging from kale, quinoa, and spinach and add protein options such as steak, shrimp and tofu. There are plenty of veggies to pile, along with add-ons and sauces. They have 8 custom spice blends crafted from various chefs from around the country.
Bolay is open days a week – from 11 a.m.-9:30 p.m. Monday through Saturday and 11 a.m.-9 p.m. on Sundays.
